Aflatoxin Detection in Individual Maize Kernels Using a Handheld Fluorescence Spectroscopy Device

Abstract

We present a non-destructive fluorescence sensing methodology, optimized for aflatoxin detection in individual food products, demonstrating a promising sensitivity by differentiating naturally-contaminated maize samples with an aflatoxin concentration difference of only 0.6 μg/kg.
