Laser correlation spectrometer for measurements of milk disperse contents

Abstract

In this paper we present the photon correlation spectroscopy approach to measuring concentrations and size distributions for fat globules and casein micells in milk. It is known that the disperse structure is closely linked with milk quality. The disperse composition of the milk consists of fat globules and casein micells, 2-4 µm and 0.02-0.3 µm, respectively.
